Saturday Sweets

Today, I made an adaptation of this adorable "pie pops" recipe. Mine ended up just being miniature pies due to my lack of lollipop sticks, but they were delicious anyway! Then again, I could probably eat a baked pie crust all by itself; I've always been a sucker for flaky, buttery pastries. I played it by ear with the fillings, I made a strawberry-caramel, apple, pecan, and chocolate-peanut butter. The pecan didn't turn out so well, somehow only those overcooked and the filling seemed to caramelize in the pies...it was strange. But the other three did well, especially the apple and chocolate-peanut butter. Here's a loose estimation of the recipes for the fillings, I just used two frozen 9 inch pie crusts and a round cookie cutter for the crusts.


Apple Pie Filling
1/2 cup Granny Smith Apple, chopped
1/2 Tbsp sugar
1 tsp nutmeg
1/4 Tbsp cloves
1/2 Tbsp cinnamon
Pinch of flour


Strawberry-Caramel Filling
2 strawberries, chopped
2 Tbsp strawberry preserves
1 Tbsp caramel topping (I used Hershey's)


Chocolate-Peanut Butter Filling
1/3 cup chocolate chips, melted
2 Tbsp peanut butter


That last one is complicated, right? I think it's the most fun to play with recipes and create ideas of your own. Anyway, happy baking! And happy Saturday!
